It doesn’t take a lot of ingredients to make a tasty side dish or salad. Chickpeas, feta cheese, avocado, cilantro and lime juice pull together a healthy and easy to throw-together at the last minute. It is a crowd-pleaser at gatherings or family meals!
It seems like just about every week in the spring/summer there is an opportunity to throw together a quick salad for something or another. A birthday party, holiday gathering, play date. My stepmom sent me this recipe a few weeks ago and I’ve had it sitting on my kitchen counter because I knew I’d be making it soon! It was beyond easy, it was a great combination of flavors and it got devoured quickly at our Mother’s Day gathering. Put this one on your QUICK AND EASY summer list, along with these favorites: Edamame Tomato Corn Salad, Loaded Veggie Salad, Olive Tomato Feta Salad and Broccoli Salad!
Toss the following ingredients together in a large bowl.
Stir and chill! See? EASY!
Feta Chickpea Salad
- 15 oz. can chickpeas rinsed and drained
- 2 avocados peeled, pitted and chopped
- 1/3 cup cilantro chopped
- 1 bunch green onions sliced (white and light green parts only)
- 5 oz. container feta cheese
- 3 tbsp. olive oil
- Juice from 1 lime
- Salt and pepper to taste
- Combine all ingredients in a large bowl. Mix well and chill until ready to serve!
