Take your shredded apples and carrots and begin to fold them into the dough. They both hold enough moisture to mix in easily. Next up, get ready to portion them out.

Scoop up the dough and add them to your muffin tin. You want each serving to be at least 3/4 of the way full. Next up, get that streusel topping ready!

In a small bowl, combine the butter, flour and brown sugar. Mix with a fork until crumbly. Sprinkle over the tops of the muffins. This little extra really makes these muffins!

RECIPE NOTES If you love nuts, it would be really delicious to add chopped pecans or chopped walnuts into your batter Add in or replace with zucchini - also good in this muffin!
