WHY MAKE THIS RECIPE?

I love the thinly sliced red potatoes that are so creamy. The double cheese is pretty good too.  It is the perfect side dish on the holidays or for a weeknight hearty meal.

INGREDIENTS

-10 Baby red potatoes -1 cup Cheddar cheese -8 oz Cream cheese -3 cups Milk -1 Yellow Onion -Italian parsley

STEP 1

Preheat oven to  400 degrees F.  Coat a 9×13 baking dish with cooking spray.

STEP 2

Get your skillet nice and hot to melt the butter. Cook your onions and parsley until they are soft.

STEP 3

When you can smell the aroma of the onions, add the flour, salt and pepper and cook for 1 minute.

STEP 4

Add the milk and cook for an additional 5 minutes. You're going to stir in your cream cheese to thicken up the sauce.

RECIPE NOTE

Cheddar cheese is perfect for this side dish but sharp cheddar would combine well too.
