A pan of totally delicious Chicken Enchiladas. This recipe has no structure and minimal effort but it's filling and loved by all.


A lot of flavor baked in to these chicken enchiladas. You can add as much spice and flavor as you love.

Corn tortillas cut into bite sized pieces will help give you the flavor and thicken up the enchiladas too. 

Combine the chicken, sauce, cheese, tortilla pieces and tomatoes with the onions into a bowl and combine. 

Bake the enchiladas adn be sure to top it with your favorite Mexican toppings such as avocado, salsa or hot sauce, more cheese, cilantro, whatever!
