This is the perfect, most delicious way to use up butternut squash in the fall! Butternut squash soup recipe with cream cheese is guaranteed creamy, packed with comforting flavor and super easy to prepare.
4 tbsp salted butter1/2 onion2 lb butternut squash3 c water4 chicken bouillon cubes1/2 tsp salt & pepper1/4 tsp cayenne pepper8 oz cream cheese
Peel and chop your butternut squash. (Need help? Check out the step--by-step instructions on the blog!)
Dice your onion, add it to a hot dutch oven and let the onion soften.
Add butternut squash, water, bouillon cubes, salt, pepper and cayenne pepper. Bring to a boil, then simmer for 30 minutes.
Remove pan from the heat and add the cream cheese. Stir until cheese is melted.
Let cool for 10 minutes. Add mixture to a blender and or puree with an immersion blender until smooth and creamy.
Pour back into the Dutch oven and heat until just warmed through. Serve immediately.
