INSTANT POT CHICKEN TORTILLA SOUP 

This Instant Pot chicken tortilla soup recipe is the BEST! It is packed with flavor, it is easy to make and it tastes like it’s been cooked low and slow all day long. Throw it together for your next family dinner OR big gathering.

– Taco seasoning – Chicken breasts – Yellow onion – Garlic – Jalapeno pepper – Cilantro – Chili powder, Cumin, Paprika, Salt & pepper – Chicken broth – Rotel tomatoes – Black beans – Corn – Green chiles – Toppings: lime wedges, cilantro, cheddar, sour cream, tortilla strips

Rub taco seasoning all over the chicken breasts. Add the oil to the Instant Pot insert with the olive oil. Once hot, sear each side about 3 minutes of the chicken breasts. 

Add the diced veggies to the pot and stir in the seasonings. 

Pour in the chicken broth, green chiles, black beans, and corn over the mixture. Set the timer to 10 minutes. 

Do a quick release on the instant pot so you can shred up the chicken. Then stir it back into the mixture and serve!

Serve with your favorite garnishes like avocado, tortilla strips, jalapeno slices, cheese or more!
