Pumpkin Mac and Cheese!

WHY MAKE THIS RECIPE?

Adding pumpkin to your favorite mac and cheese dinner is a sure fire way to have it creamier than ever and it's a wonderful kid-friendly meal too!

INGREDIENTS

-elbow macaroni -salted butter -all-purpose flour -milk -cream cheese -cheddar cheese -pumpkin puree -parmesan cheese -salt and pepper

STEP 1

Coat a 9×13 baking dish with cooking spray. Set aside.

STEP 2

In a large saucepan, bring water to a boil. Add pasta and cook 2 minutes shy of al dente.

STEP 3

Drain, rinse and add the cooked pasta to the prepared pan in a single layer.

STEP 4

 In a Dutch oven, melt the butter. Add flour and whisk until combined. Add milk and whisk until mixture is creamy and thickened.

STEP 5

Add cream cheese, 1 1/2 cups cheddar, pumpkin puree, salt and pepper to the pan and stir until cheese has melted.

STEP 6

Pour the cheese mixture over the top of the pasta in the pan.

STEP 7

Mix it slightly with a spoon and top with Parmesan cheese and reserved 1/2 cup cheddar.

STEP 8

Bake uncovered for 20 minutes or until cheese is very lightly golden brown around the edges.
