COCONUT CREAM PIE

A creamy homemade custard filling is topped with fresh, sweet whipped cream and toasted coconut flakes. This is the perfect light dessert to enjoy any time!

– Sweetened flaked coconut – Pie crust – Coconut milk – Heavy whipping cream – Eggs – Sugar – Cornstarch – Salt – Vanilla and Coconut extract – Powdered sugar

Don't skip this step! Be sure to give the coconut a few minutes on each side in the oven. So much flavor comes in this step once it's put into the filling.

Prepare the filling. Bring the ingredients to boil over medium heat, whisking constantly until the custard is smooth and thick. Remove from the heat and add in the toasted coconut.

Add the filling to the baked crust. Wrap it in plastic wrap to avoid a film settling on the top as it cools. Give it a couple of hours in the fridge before adding the homemade whipped cream.

Prepare the homemade whipped cream with a stand or hand mixer. Top the custard filling and sprinkle some toasted coconut over the top. Serve and enjoy!
