CHICKEN ENCHILADAS WITH SALSA VERDE

A standard plate of enchiladas is delicious, but you should experiment with salsa verde to spruce up dinner. It'll be devoured!

Save time by pulling meat straight from a Rotisserie chicken. Alternative: Bake 2 large chicken breasts  in the instant pot, then shred using two forks.

So much flavor because you immerse the tortilla in the salsa verde before filling it with chicken and cheese. 

You should get about 8 tortillas in each pan.

Add a can of black beans to the chicken mixture for extra flavor, fiber and texture.
