Ingredients

  • 3 oz. feta cheese preferably French, crumbled (3/4 cup)
  • 2 1/2 tbsp. red wine vinegar
  • 1 tbsp. water
  • 1/2 tsp. dried oregano
  • 1/4 cup extra-virgin olive oil plus 1 tbsp.
  • Kosher salt and freshly ground pepper

Instructions

  • In a food processor, pulse the crumbled feta with the vinegar, water, oregano and oil until smooth. Season with salt and pepper.
