PF Chang's Chicken Lettuce Wraps (Skinny Version!)

These healthy chicken lettuce wraps taste just like the famous PF Chang’s appetizer. They taste better than the original with fewer calories and they’re done in just 20 minutes!

Ingredients

  • 1 lb. ground chicken or 2 chicken breasts cut into bite size pieces
  • 1 small yellow or white onion chopped
  • 3 cloves garlic minced
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 2 tbsp. soy sauce
  • 1 tbsp. rice vinegar
  • 1 tbsp. sesame oil
  • 1 tbsp. creamy peanut butter
  • 1 tbsp. water
  • 1 tbsp. honey
  • 2 tbsp. chili garlic sauce
  • 4 green onions sliced
  • 8 oz. can water chestnuts chopped
  • 8 large butter, iceberg or romaine lettuce leaves
  • Green onions, chopped peanuts and chili sauce for topping

Instructions

  • Heat a large skillet over medium heat. Add chicken, onion, garlic, salt and pepper and cook until the chicken is nearly cooked through. In a microwave-safe bowl, combine the soy sauce, rice vinegar, sesame oil, peanut butter, water, honey and chili garlic sauce. Microwave for 30 seconds and stir until creamy.
  • Add the liquid mixture to the chicken mixture and stir until combined. Add the green onions and water chestnuts. Cook for 3 minutes, or until heated through.
  • Remove from heat and divide the chicken mixture between the lettuce leaves. Top with the desired toppings and serve.

Notes

Topping options for lettuce wraps: chopped peanuts, chili garlic sauce and green onion slices.
Chili garlic sauce can be found in the Asian aisle of most grocery stores.
Use either 1 pound of ground turkey or ground chicken or cut 2 chicken breasts into bite size pieces.
Romaine lettuce, butter lettuce or iceberg lettuce leaves work best for this recipe. The sturdier the leaf, the better.
Make this a gluten free recipe by using GF soy sauce.
