Baked Sweet Potato Recipe In The Microwave

  • Run the potatoes under cold water, scrubbing with fingers or a small brush, until clean. Poke holes all around the potatoes using a fork.
  • Rub approximately 1 tablespoon of olive oil over the entire surface of each potato. Place potatoes (one at a time) on microwave-safe plate and cook for 5 minutes in the microwave, flipping halfway through. 
  • If a fork or knife cannot be easily inserted into the center of the potato after cooking, microwave in 30-second intervals until fork tender.

Notes

  • You may wrap a damp paper towel around the potato as it cooks to prevent hard spots from forming. As long as you do not overcook, these hard spots will not occur.
  • Expert tip: Use an oven mitt to remove from the microwave after cooking. It will be steaming hot!
  • Store leftovers in plastic wrap or an airtight container for up to 3 days in the fridge. Reheat as needed in the microwave.
