Spicy Bean Salsa

This spicy bean salsa recipe is fresh, zesty, delicious and great for parties. It is also the perfect food to have hanging out in your fridge all week for lunch wraps, salads or to top grilled chicken with.

Ingredients

  • 1 green bell pepper chopped
  • 2 medium tomatoes chopped
  • 1 red onion chopped
  • 2-4 jalapeno peppers diced, optional
  • 15 oz blackeye peas drained
  • 15 oz whole kernel corn drained
  • 8 oz Italian salad dressing
  • garlic salt to taste
  • salt & pepper to taste

Instructions

  • In a large bowl, combine the bell pepper, tomatoes, red onion, jalapenos, blackeye peas, black beans and corn. Season with Italian dressing, garlic salt and salt & pepper; mix well. Cover and refrigerate overnight to blend flavors. Serve with chips or crackers.

Notes

 
  • This recipe is gluten free, but before you add the Italian dressing read the label! Some store-bought versions of the dressing contain wheat.
  • Allowing the salsa to marinate for a minimum of 30 minutes is a must! The best scenario is to refrigerate overnight for optimal flavor!
  • I enjoy this salsa in so many different ways, but I'll tell you my favorites! Solo with a sprinkling of salt as a light lunch. As a topping on a grilled chicken breast. As a dressing on a leafy salad. As a dip for tortilla chips.
