Mint Chocolate Brownies: Delicious mint frosting sandwiched between perfect, chocolatey brownies and creamy chocolate. Take your next pan of brownies to the next level by combining fudgy and minty! Perfect party food or dinner dessert!
Preheat the oven to 350 degrees F and coat a 9×13 baking dish with cooking spray. Using a stand mixer fitted with the paddle attachment (or a large mixing bowl with a hand mixer), combine the butter, sugar, eggs and vanilla extract and beat on medium speed until creamy and free of lumps. Add the melted chocolate and mix until just combined.
In a separate bowl, combine the flour, cocoa powder, baking soda and salt. Mix well. Gradually add to the butter-sugar mixture and beat on medium speed until just combined.
Pour the batter into the prepared baking dish and spread evenly. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let cool.
MAKE THE FROSTING
In a large bowl, mix (using whisk attachments) the butter with a hand-held or stand mixer on medium speed until fluffy. Add the powdered sugar until just combined. Add the milk, peppermint extract and food coloring (if using) and mix on medium speed for 2 minutes. Spread in an even layer over the cooled brownies.
MAKE THE CHOCOLATE TOPPING
Combine the butter and chocolate in a microwave-safe bowl and heat in 30-second intervals in the microwave (stirring after each) until creamy and free of lumps. Pour the chocolate over the top of the mint frosting and spread in an even layer. Refrigerate for a minimum of 1 hour, cut into squares and serve!
