Heat olive oil in a skillet over medium heat. Add cauliflower, mushrooms, cilantro, lime juice, salt and pepper. Cook for 10 minutes, stirring occasionally, until veggies have softened.
Remove from the heat, top with extra lime juice and serve immediately!
Notes
Cauliflower - Purchase a head of cauliflower and use a food processor to rice or the refrigerated section at the local grocer sells rice cauliflower in pre-packaged bags.
Mushrooms - Such a simple addition but adds so much flavor.
Fresh cilantro - Substitute with Italian flat-leaf parsley, if desired.
