Whole30 Cauliflower Rice Recipe

Replace rice with this veggie-packed Whole30 cauliflower rice side dish. It is easy to make and done in 15 minutes.

Ingredients

  • 2 tbsp olive oil
  • 3 cups cauliflower finely chopped
  • 3 cups mushrooms finely chopped
  • 1/4 cup fresh cilantro finely chopped (substitute with flat-leaf parsley, if desired)
  • 1 lime juiced
  • 1/2 tsp salt
  • 1/2 tsp pepper

Instructions

  • Heat olive oil in a skillet over medium heat. Add cauliflower, mushrooms, cilantro, lime juice, salt and pepper. Cook for 10 minutes, stirring occasionally, until veggies have softened.
  • Remove from the heat, top with extra lime juice and serve immediately!

Notes

  • Cauliflower - Purchase a head of cauliflower and use a food processor to rice or the refrigerated section at the local grocer sells rice cauliflower in pre-packaged bags.
  • Mushrooms - Such a simple addition but adds so much flavor.
  • Fresh cilantro - Substitute with Italian flat-leaf parsley, if desired.
  • Lime - Use freshly squeezed limes when possible.
