Zesty Italian Pasta Salad Recipe

This is the best zesty Italian pasta salad you will eat. It is packed full of delicious bites, including olives, salami, tomatoes and artichokes. Perfect for game day parties and summer potlucks!

Ingredients

  • 16 oz zesty Italian salad dressing
  • 1 lb rotelle pasta cooked and drained/rinsed
  • 1 yellow onion chopped
  • 8 celery stalks thinly sliced
  • 16 oz cojack cheese cubed
  • 16 oz summer sausage cubed
  • 42 oz artichoke hearts quartered, drained
  • 13 oz pitted black olives drained
  • 16 oz julienned sun-dried tomatoes drained and chopped
  • 1/2 tsp sea salt
  • 1/2 tsp ground pepper
  • 2 tsp red pepper flakes
  • 1/4 cup Parmesan cheese grated

Instructions

  • Combine all ingredients in a large bowl, cover and let sit overnight. Serve chilled.

Notes

  • Use GF pasta for a gluten free salad!
  • Allowing the ingredients to marinate in the fridge overnight is ideal. When you pull the cold pasta salad out of the fridge the next day, the flavors will be perfect. Drizzle olive oil over the top just before serving.
  • Replace sausage with chunks of cooked chicken or even steak.
  • If you are feeling adventurous and would like to branch out from this recipe, consider adding other veggies. Great options include fresh tomatoes, fresh broccoli florets, cucumbers, carrots, green beans or bell peppers.
  • Consider adding fresh herbs to the mix! Fresh parsley, chives or basil all taste great.
