Sun Dried Tomato Stuffed Chicken Breasts

Ingredients

  • 6 chicken breasts fat trimmed
  • 8 oz. jar julienne sun-dried tomatoes chopped
  • 13.75 oz. can artichoke hearts drained and chopped
  • 1/2 cup fresh basil chopped
  • 8 oz. package crumbled feta cheese
  • 3/4 cup cheddar cheese shredded

Instructions

  • Preheat oven to 350 degrees F. Coat 2 9×13-inch baking dishes with cooking spray and set aside. In each of the chicken breasts, cut a slit horizontally without going all the way through to the other side.
  • In a medium bowl, combine tomatoes, artichokes, basil, feta cheese and cheddar cheese. Mix well. Divide the mixture between the chicken breasts and spoon into openings. Seal the ends and secure with toothpicks.
  • Divide the chicken between the 2 prepared baking dishes and bake in the preheated oven for 30-35 minutes, or until chicken is cooked through. Remove toothpicks and serve warm.

Notes

Fresh basil or fresh spinach leaves chopped and added to the filling are excellent options – try them both. The tomatoes and spinach make a delicious combo!
For a little spice, add a 1/2 tsp of red pepper flakes into your creamy mixture.
I love garlic in everything – add 1 teaspoon of garlic powder to your mixture for a bump of flavor!
This dish can be prepared in a cast-iron skillet – it will brown the chicken nicely and cook evenly. Once you add the chicken, cook it 5-7 minutes (over medium high heat) on each side and then place a cover over the skillet to help the chicken finish cooking and the cheese melt for an additional 2-3 minutes.
If you don’t love feta, use fresh mozzarella cheese instead.
