Ingredients

  • 16 oz. can chickpeas (garbanzo beans), rinsed and drained
  • 10.5 oz. container cherry or grape tomatoes halved
  • 1 cucumber peeled, quartered and sliced
  • 1/4 cup chopped flat-leaf parsley
  • 6 oz. container Feta cheese crumbles
  • Juice from 1/2 of a lime
  • 3 tbsp. white wine vinegar
  • 3 tbsp. extra-virgin olive oil
  • Salt and pepper to taste

Instructions

  • Combine all ingredients in a large bowl. Mix well. Refrigerate until ready to serve.
