Ingredients

  • 1 lb. fresh green beans rinsed and ends snapped off
  • 3 tbsp. olive oil
  • 1/4 cup Parmesan cheese
  • Salt and pepper to taste

Instructions

  • Preheat oven to 425 degrees F. Line a rimmed baking sheet with aluminum foil and coat with cooking spray.
  • In a large bowl, combine the green beans, olive oil, Parmesan cheese, salt and pepper. Mix well and pour into a single layer onto the prepared baking sheet.
  • Bake in the preheated oven for 30 minutes, stirring/flipping the green beans halfway through. Serve warm.

Notes

  • Add 3 or 4 minced garlic cloves to the ingredients before adding to the oven. Be careful that it doesn't burn! If you don't have any on hand, toss in a teaspoon of garlic powder.
  • I often use coarse sea salt and fresh cracked pepper - it's delicious! A dash of red pepper flakes is amazing if you like a bit of spice!
  • Canned or frozen green beans will work if you don't have garden fresh on hand.
  • For an extra indulgent recipe, throw a few french fried onions or panko bread crumbs on top of the green beans when roasting for a delicious crunch!
  • Throw in a little chopped bacon to kick the flavor up a notch.
  • If you are following Whole30 meal program, omit the Parmesan cheese.
