- 5-6 medium Russet potatoes sliced lengthwise into 1/2-inch sticks
- 1/4 cup olive oil
- 1/4 cup Parmesan cheese
- 3 cloves garlic minced
- 1/2 tsp. paprika
- Salt and pepper to taste
Preheat oven to 450 degrees F. Line two baking sheets with parchment paper and coat with cooking spray.
In a large bowl, combine the olive oil, Parmesan cheese, garlic, paprika, salt and pepper. Mix well and add sliced potatoes. Toss until potatoes are well coated.
Divide between the two baking sheets and arrange potatoes so they are in a single layer. Bake in the preheated oven for 35-45 minutes (flipping half-way through) or until crispy. Serve warm with ketchup.
