- 3 tbsp. olive oil
- 2 cups cooked chicken shredded or cubed
- 2 cups cooked pasta
- Salt and pepper to taste
- 8.5 oz. can artichoke hearts drained and chopped
- 14.5 oz. can diced tomatoes
- 1 cup shredded mozzarella cheese
Heat olive oil in a skillet over medium heat. Add cooked chicken, pasta, salt and pepper. Cook, stirring occasionally, for 3 to 4 minutes, or until heated through.
Add artichokes and diced tomatoes. Cook, stirring occasionally, for 5 minutes. Add the cheese and stir until melted. Serve immediately!
