Buffalo Shrimp Salad Recipe

This delicious little buffalo shrimp salad packs a punch! It is satisfying, flavorful, packed with texture and SUPER easy to make.

Ingredients

  • 2 tbsp butter
  • 3 cloves garlic minced
  • Salt and pepper to taste
  • 12 oz frozen shrimp
  • 2 tbsp lemon juice
  • 1/2 cup buffalo sauce
  • 8 cups mixed greens rinsed and broken into pieces
  • 1 cup grape or cherry tomatoes halved
  • 1 cucumber peeled and chopped
  • 1 cup carrots chopped
  • 1 cup blue cheese crumbles

Instructions

  • Heat butter in a skillet over medium heat. Add garlic and cook until soft and fragrant, about 4 minutes. Add salt, pepper, shrimp and lemon juice. Cook, stirring constantly, over medium-high heat until shrimp are cooked through, about five minutes.
  • Remove skillet from heat and add buffalo sauce. Stir until combined and transfer to a bowl. Prepare four plates, dividing the lettuce, tomatoes, cucumbers and carrots between them. Top with shrimp and sauce and blue cheese crumbles.

Notes

  • Be careful not to overcook the shrimp. They cook quickly! It'll take just a handful of minutes.
  • Don't leave out the sauce! Drizzle it over the top of the salad before serving.
  • If you're turned off by blue cheese, no worries! Replace with feta or goat cheese crumbles.
  • Replace butter with olive oil for a healthier recipe.
