Heat butter in a skillet over medium heat. Add garlic and cook until soft and fragrant, about 4 minutes. Add salt, pepper, shrimp and lemon juice. Cook, stirring constantly, over medium-high heat until shrimp are cooked through, about five minutes.
Remove skillet from heat and add buffalo sauce. Stir until combined and transfer to a bowl. Prepare four plates, dividing the lettuce, tomatoes, cucumbers and carrots between them. Top with shrimp and sauce and blue cheese crumbles.
Notes
Be careful not to overcook the shrimp. They cook quickly! It'll take just a handful of minutes.
Don't leave out the sauce! Drizzle it over the top of the salad before serving.
If you're turned off by blue cheese, no worries! Replace with feta or goat cheese crumbles.
Replace butter with olive oil for a healthier recipe.
