4cupseach romaine lettuce and iceberg lettucerinsed and broken into small pieces
2Granny Smith applescored and chopped
1cucumberpeeled and chopped
2avocadospeeled, pitted and chopped
1/4cupextra-virgin olive oil
1/4cupwhite wine vinegar
Juice from 1/2 lemon
Salt and pepperto taste
In a large bowl, combine the lettuce, celery, apples, green olives, cucumbers, avocados and green onions. Toss.
In a small bowl, whisk together the olive oil, white wine vinegar, lemon juice, sugar, salt and pepper. Cover and refrigerate both bowls until ready to serve. Just before serving, pour the dressing into the salad bowl and toss until coated.
Season with salt and pepper just before serving! Add 1/2 cup Feta cheese crumbles for an extra creamy salad. Capers would be a great green addition to this green salad!
