Wild Rice Salad

Toss in a salad, stuff in to a tomato or sandwiched between two slices of bread however you choose to devour be prepared to say YUM!!!

Ingredients

  • Juice from 1/2 of a lemon
  • 2 tbsp. sugar
  • 2 Granny Smith apples cut into bite-size pieces
  • 2 cups cooked wild rice
  • 3 large celery stalks sliced
  • 1/3 cup mayonnaise
  • 1/2 cup sour cream
  • 3 tbsp. capers
  • 1/2 tsp. salt
  • 1 1/2 cups chicken cooked and shredded (optional)
  • Dried cranberries for garnish (optional)
  • Lettuce for serving (optional)

Instructions

  • In a large bowl, combine the lemon juice and sugar. Stir until sugar is dissolved. Add apples and toss to coat. Add wild rice, celery, mayo, sour cream, capers, salt and chicken (if using). Mix well. Garnish with cranberries and serve over lettuce, if desired.
