Homestyle Ground Beef Casserole is just like your mom’s recipe but so much more! This is a perfect hearty weeknight meal to put on the table. Ingredients

  • 12 oz egg noodles
  • 8 oz sour cream
  • 3 oz cream cheese softened
  • 4 oz diced green chilies
  • 1 lb ground beef
  • 20 oz rotel tomatoes
  • 6 oz tomato paste
  • 1 tsp Italian seasoning
  • 1 tsp seasoned salt
  • 1 cup cheddar cheese shredded
  • 1/2 cup parmesan cheese grated
  • 1 cup mozzarella cheese shredded

Instructions

  • Coat a 9×13 baking dish with cooking spray and set aside. Cook egg noodles in boiling water 2 minutes shy of being al dente. Drain and add sour cream, cream cheese and chiles (if using) to the noodles. Stir gently until combined. spread evenly onto the bottom of the prepared baking dish.
  • Preheat oven to 350 degrees F. Cook ground beef in a skillet over medium heat until no longer pink; drain. Add canned tomatoes, tomato paste, Italian seasoning and seasoned salt. Cook for 3 minutes, stirring. Pour mixture evenly over noodles in baking dish.
  • Top with an even layer of cheddar, Parmesan and Mozzarella, in that order. Cover tightly with foil and bake in the preheated oven for 30 minutes. Remove foil and bake for an additional 10 minutes.

  • The can of diced green chiles adds such a delicious little punch to this casserole, but if you prefer to keep it on the mild side simply omit this ingredient!
  • Replace one of the cans of diced tomatoes with an equal amount of tomato sauce for a creamier dish.
  • There are four types of cheese in this recipe! FOUR! YUM! I love tasting all of them in the dish, but if you are wanting to simplify the cheese situation feel free to use either Mozzarella or cheddar cheese instead of using both.
  • Feel free to replace the beef with ground chicken, turkey or even pork!
  • 15 minutes before serving, whip up a batch of garlic or cheese bread to serve alongside the dish.
