Ingredients

  • 30 oz hash browns frozen, any variety
  • 1 stick butter cut into pats
  • 8 oz heavy whipping cream
  • 1 tbsp Seasoning Salt such as Lawry's

Instructions

  • Preheat oven to 350 degrees F. Coat a 9x13 baking dish with cooking spray. Distribute frozen hash browns evenly in prepared baking dish. Spread out the pats of butter evenly over top of the hash browns, and pour whipping cream evenly over the top.
  • Sprinkle evenly with seasoning salt. Cover pan with aluminum foil and bake in preheated oven for 1 hour.

Notes

  • This 4 ingredient hash brown casserole (aka "funeral potatoes") can easily become a complete meal by adding diced ham, ground turkey or sliced breakfast sausage.
  • This recipe would be delicious with a can of diced green chilies thrown in for added spice.
  • Adding a thin layer of shredded cheddar cheese 15 minutes before cook time is up is an absolutely delicious way to create an easy batch of cheesy hash brown potatoes.
  • To achieve that golden brown crispy perfection, remove the foil around the 45-minute mark.
  • Store leftovers in an airtight container in the fridge for up to 5 days.
