- 4 sweet potatoes skins scrubbed
Pour 1 1/2 cups water into the Instant Pot and place trivet in pot.
Using fork tines, poke holes around each sweet potato and add them to the pot. Cut the potatoes in half crosswise, if needed.
Place the cover on the pot and set timer to 15 minutes on high pressure (pressure cook setting). It will take the IP around 14 minutes to build up pressure before it begins cooking.
When cooking time is done, let the pressure release naturally. Remove the cover and serve with a pat of butter!
- When serving this as a side, consider adding a pat of salted to the flesh. For an extra touch of sweetness, add a spoonful of brown sugar, too!
- Be sure to scrub your potatoes well before cooking. The skin is edible and delicious!
