1oztaco seasoninga packet or 2 tbsp homemade taco seasoning
1/2cup water
1cup cheddar cheeseshredded
1cuplettuceshredded
1cupgrape or cherry tomatoes halved
sour cream, cilantro and taco saucefor topping
Instructions
Preheat oven to 375 degrees F and coat a 12-cup muffin tin with cooking spray. Place 2 wonton wrappers in each muffin hole (stagger wrappers), pressing all the way down to the bottom and up the sides.
Cook ground beef in a skillet over medium heat until no longer pink; drain. Add taco seasoning and water or broth and cook until liquid has reduced. Scoop 2 tablespoons of the meat into each prepared wonton-lined cup. Top with a pinch of cheddar cheese. Bake in the preheated oven for 10-12 minutes, or until cheese has melted and the edges of the wonton wrappers are golden brown.
Remove from oven and top each cup with lettuce, tomatoes, sour cream and cilantro. Serve immediately!
Notes
Add a can of Rotel with green chilis and diced tomatoes into the hamburger along with the taco seasoning or in place of taco seasoning. This will keep your meat moist and flavorful!
To make your taco cups vegetarian, you can replace taco meat with refried beans. Or just add a dollop of beans to the cup with the meat by placing it inside the wonton before your meat.
