Skillet Chocolate Chip Cookie Recipe

Enjoy this crispy-soft, ooey-gooey, oversized chocolate chip cookie straight out of the oven and with a scoop of vanilla ice cream! Baking it in a cast iron skillet gives it a perfectly crispy outer edge and a soft center. It’s a cookie lover’s dream come true!

Ingredients

  • 1 cup salted butter softened
  • 1/2 cup granulated sugar
  • 1 cup brown sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 cups semi-sweet chocolate chips or chunks or a mixture of both
  • Vanilla ice cream and chocolate syrup for topping if desired

Instructions

  • Preheat oven to 350 degrees F and coat a cast-iron skillet with cooking spray. Using a stand mixer fitted with the paddle attachment
    (or a large mixing bowl with a hand mixer), combine the butter, sugars,
    eggs and vanilla extract. Beat on medium speed until creamy and free
    of lumps.
  • In a separate bowl, combine the flour, baking soda and
    salt. Mix well. Gradually add to the butter-sugar mixture and beat on
    medium speed until just combined. Stir in the chocolate chips/chunks.
  • Spread the batter in an even layer inside the prepared cast iron pan. Bake in the preheated oven for 20-25 minutes or until edges are golden brown and center is cooked through. Top with ice cream and chocolate syrup and serve!
