GLAZE
1/4cupgranulated sugar
1/4cuporange juice
2tbsplemon juice

Instructions
MAKE THE COOKIE CRUST
In a medium bowl, combine the butter, sugar,egg and vanilla. Beat on medium speed until creamy and free of lumps. In a separate bowl, combine the flour, baking powder and salt. Mix well. Gradually add to the butter mixture and beat until combined. Form dough into a disc, wrap in plastic wrap and refrigerate for 1 hour.
Preheat oven to 350 degrees F. Coat a 12- or 13-inch pizza pan with cooking spray. Spread the cookie dough into an even layer on the prepared pan, going all the way to the edges. Bake in the preheated oven for 18-20 minutes, or until golden brown. Let cool.
PREPARE THE FROSTING
In a medium bowl, combine the cream cheese, butter, powdered sugar, vanilla and milk. Using the whisk attachments, beat on medium-high speed for 3 minutes.
MAKE THE GLAZE
In a small saucepan, combine the sugar, orange juice, lemon juice and cornstarch. Bring to a boil, then reduce to medium-low heat and simmer for 2 minutes, stirring constantly. Remove from heat and let cool.
ASSEMBLE THE PIZZA
Spread the frosting in an even layer over the cookie. Top with assorted fruit and brush the glaze over the top. Refrigerate until ready to serve. Just before serving, cut into slices!
Notes
Replace the cookie crust with pre-made sugar cookie dough for an even easier recipe!
If you have glaze leftovers, don’t throw them. Drizzle it over the pizza just before serving!
Change things up by rolling out the dough and using 4-inch round cookie cutters to create mini fruit pizzas! Bake for 8 minutes at 350 degrees, or until edges are very lightly golden.
If you don't have a pizza pan, use a half sheet pan instead.
