Ingredients

  • 4 eggs
  • 4 pieces whole wheat bread
  • Toppings for toast

Instructions

  • Generously coat a nonstick skillet with cooking spray. Heat skillet on medium. One at a time, divide the yolks from the whites of each egg and put each into a small bowl. Lightly beat yolks with a fork.
  • Spray the inside edges of 2 heart-shaped cookie cutters (one small and one large). Place them onto the heated skillet. Pour the egg white from one egg into the large cookie cutter and pour the yolk into the small one. Cover the skillet and let the eggs cook for 3 to 4 minutes. When cooked through, use a spatula to move the eggs to a plate. Carefully remove the eggs from the cookie cutters and repeat process with remaining eggs.
  • Toast the bread and cut into the bread with the heart-shaped cookie cutters. Coat toast with desired toppings.
