Ingredients

  • 16 oz zesty Italian salad dressing
  • 1 lb rotelle pasta cooked and drained/rinsed
  • 1 yellow onion chopped
  • 8 celery stalks thinly sliced
  • 16 oz cojack cheese cubed
  • 16 oz summer sausage cubed
  • 3 13.75 oz cans artichoke hearts quartered, drained
  • 2 6.5 oz cans pitted black olives drained
  • 2 8.5 oz jars julienned sun-dried tomatoes drained and chopped
  • 1/2 tsp kosher salt
  • 1/2 tsp ground pepper
  • 2 tsp red pepper flakes
  • 1/4 cup Parmesan cheese grated

Instructions

  • Combine all ingredients in a large bowl, cover and let sit overnight. Serve chilled.

Notes

  • Use GF pasta for a gluten free salad!
  • Replace the cojack with any variety such as muenster, cheddar or provolone cheese.
  • Sliced pepperoni can replace the sausage, if desired.
  • Replace yellow with red onion for an added zing.
  • Use salad dressing of your choice!
