  • handful fresh spinach
  • 1 cup sweet potatoes roasted
  • 1/2 cup quinoa prepared
  • 1/2 cup walnuts chopped
  • 1/2 cup blueberries
  • 1/2 of an avocado peeled, pitted and sliced
  • 1/2 lime juice
  • Salt and pepper to taste
  • Cayenne pepper to taste, optional
  • Salsa for topping


  • In a medium bowl, combine spinach, sweet potatoes, quinoa, walnuts, blueberries, avocado, lime juice, salt, pepper and cayenne pepper (if using). Top with salsa and enjoy!
