CHOOSE 1 POUND TOTAL OF THE FOLLOWING MEAT(S) (mix & match if desired):
1lb.Ground sausage, beef or venison (cook in skilet over med-high heat until meat is no longer pink)
Bacon(cooked until crispy and chopped)
Diced cooked ham
Shredded chicken
CHOOSE UP TO 2 OF THE FOLLOWING VEGGIES:
1white, yellow or red onion(cooked in skilled with olive oil over med-high heat for 3 to 5 mins)
1bunchgreen onionsthinly sliced (cooked in skillet with olive oil over med-high heat for 3 to 5 mins)
1green or red bell pepper(cooked in skilled with olive oil over med-high heat for 3 to 5 mins)
2cupschopped asparagussteamed
8oz. package mushroomschopped (cooked in skilled with olive oil over med-high heat for 3-5 mins)
8oz. container cherry or grape tomatoeshalved
2cupschopped kaleor spinach
2cupsbroccolifinely chopped, steamed
1mediumzucchinifinely chopped (cooked in skilled with olive oil over med-high heat for 3 to 5 mins)
CHOOSE UP TO 2 OF THE FOLLOWING EXTRAS (optional):
1/4cupfresh parsleychives or cilantro, finely chopped
2clovesgarlicminced
1-2jalapeno peppersfinely chopped
CHOOSE ANY OF THE FOLLOWING TOPPINGS (optional):

Instructions
Preheat oven to 350 degrees F. Coat a 9×13 baking dish with cooking spray and set aside.
In a large mixing bowl, combine the eggs, hash browns, cheese, milk, salt and pepper. Set aside.
Choose up to 2 of the veggies and cook as directed (if cooking is neccesary) If using the “extras,” cook along with veggies or alone if veggies do not need ot be pre-cooked. Add to mixing bowl.
Mix well and pour mixtrue into prepared baking dish. Spread evenly and bake in preheated oven for 1 hour. Remove from oven and let cool for 10 minutes before serving. Add toppings, if desired, and serve!
