M&M’s Ice Cream Cookie Sandwiches

Ingredients

  • 3/4 cup butter softened
  • 1 cup brown sugar
  • 1/2 cup sugar
  • 1 egg
  • 2 tsp. vanilla extract
  • 2 cups all-purpose flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1 tsp. salt
  • 2 cups M&M's milk chocolate candies divided
  • 1.75 quarts vanilla ice cream softened

Instructions

  • Preheat oven to 350 degrees F. Line two baking sheets with parchment paper and set aside.
  • In a large mixing bowl, combine the butter, brown sugar, sugar, egg and vanilla. Mix until creamy. In a medium bowl, combine the flour, baking soda, baking powder and salt. Gradually add to the sugar-butter mixture and stir until just combined. Fold in 1 cup of the M&M’s candies.
  • Roll dough into 1-inch balls and place on prepared baking sheets. Press down slightly on each ball of dough. Bake in the preheated oven for 12 minutes, or until edges are light-golden brown. Let cool completely.
  • In a medium bowl, combine softened vanilla ice cream and 1 cup M&M’s candies. Place in freezer for 15 minutes, remove and stir to create colored effect. Return to the freezer for a minimum of 2 hours.
  • Scoop two large spoonfuls of ice cream onto the bottom of a cookie and top with another cookie. Wrap in plastic wrap. Repeat with all cookies and ice cream. Freeze for a minimum of 2 additional hours and serve!
