- 4 large tomatoes sliced
- 8 cherry or grape tomatoes halved
- 2 avocados peeled, pitted and sliced
- 1/2 of a red onion sliced
- 4 large basil leaves thinly sliced
- 4 tbsp. olive oil
- 4 tbsp. red wine vinegar
- Salt and pepper to taste
Layer the following on each of four serving plates: Slices from one tomato, a few grape or cherry tomatoes, slices from 1/2 of an avocado, a few red onion slices, 1/4 of the basil, 1 tablespoon olive oil, 1 tablespoon red wine vinegar and salt/pepper.
Cover tightly until ready to serve; serve chilled!
