Ingredients

  • 1 cup pumpkin puree
  • 1/4 cup sugar
  • 1 tsp pumpkin pie spice
  • 1 tsp cinnamon
  • 2 refrigerated pie crusts rolled out
  • 4 oz cream cheese softened
  • 1 egg beaten
  • 2 tbsp Sugar and pumpkin pie spice for sprinkling

Instructions

  • Preheat oven to 350 degrees F. Spray a baking sheet with cooking spray and set aside. In a medium bowl, combine pumpkin, sugar, pumpkin pie spice and cinnamon. Mix well.
  • Place the pie crusts on a flat surface and cut each in half. Spoon 1/4 of the pumpkin mixture onto half of each half circle, leaving room for sealing edges. Spoon cream cheese onto remaining halves, also leaving room for sealing. Fold each half circle in half and seal edges.
  • Place hand pies on prepared baking sheet and brush tops with beaten egg. Sprinkle with sugar and pumpkin pie spice and bake in the preheated oven for 25 minutes, or until golden brown. Enjoy warm!

Notes

  • To dress up your hand pies, crimp the edges of the pie with fork tines for a decorative look.
  • Sift powdered sugar over the tops of the pies once they've cooled a few minutes to give them a final topping.
  • Use a biscuit cutter and cut two pieces of the pie crust to make one round smaller pie. It's fun to have smaller amounts for little kids to enjoy or for a party.
  • Enjoy warm with a cup of coffee!
