CHICKEN ENCHILADAS WITH RED SAUCE

These chicken enchiladas with red sauce are the best because we make our own version of the popular Mexican enchilada sauce!

– Olive oil – Chicken breasts – Garlic – Cilantro – Jalapeno – Green chiles – Limes – Flour tortillas – Cheddar cheese – Enchilada sauce – Toppings: green onions, avocados, tomatoes, sour cream

Chicken Enchiladas are one of those dinners that everyone loves. This popular Mexican dish is loved and devoured by all, whether kid, adult, Mexican, American or any other variety of human. Learn to make your own sauce for a DEE-licious meal!

If making your own enchilada sauce (highly recommend!) prepare it now. It takes 15 minutes. 

Cook the veggies in a skillet until softened. 

Combine the shredded chicken, green chiles and lime juice with seasoning in a mixing bowl. 

Add red sauce to the bottom of your baking dish before filling tortillas with the chicken mixture, rolling them up and adding them seam side down to the pan. 

Add the remaining sauce to the top of the tortillas, sprinkle more cheese and then bake!
