Cucumbers and cream cheese are the perfect fresh and creamy combination of flavors, providing both silky smoothness and crunch. These easy little sandwiches are great to serve for a light lunch or as a finger food at your next party.
Put half a block of softened cream cheese in a mixing bowl with freshly chopped dill and lemon juice. Combine until they are creamy and smooth.
Both english cucumbers and garden cucumbers are good in this recipe. Typically the cucumbers are thinly sliced to about 1/2" but you can layer more on top of one another or cut them thicker and have one layer.
Smear the cream cheese mixture over your slices of bread. A soft white or wheat bread works but you can expand your bread choices too.
Sprinkle seasoning salt over the cucumbers after you layer them on the cream cheese mixture. Either enjoy them open-faced or add a top slice of bread. Enjoy!
