This cucumber and cream cheese sandwich recipe is one of my FAVORITE sandwiches from childhood. Super simple, but so tasty! Great lunch to serve for guests.

Lucky me, today I have the ingredients for this simple and delish little sandwich that was a childhood favorite. My mom made cucumber and cream cheese sandwiches for me all the time at my request. Love ’em!
Cucumbers and cream cheese are the perfect fresh and creamy combination of flavors, providing both silky smoothness and crunch. These easy little sandwiches are great to serve for a light lunch or as a finger food at your next party.
Recipe Ingredients
Cream cheese – Definitely use a full-fat variety of cream cheese for this sandwich for the tastiest experience. Consider replacing the cream cheese with your favorite creamy dressing such as avocado ranch or a flavored cream cheese such as garden vegetable or chive and onion.
Cucumbers – Either slice cucumbers into thick (1/2-inch slices) and place in a single layer or slice more thinly and double or triple them up.
Dill – Go fresh with this herb and don’t leave this ingredient out!
Bread – Any variety of bread works great, but I recommend using a soft variety. Extra soft bread will nicely contrast the crunchy-creamy insides.
Seasoning salt – This is a key ingredient, so do not discount the power of a touch of seasoning salt! Lawry’s is my favorite variety to use to sprinkle on these delicious sandwiches.
How To Make This Cucumber and Cream Cheese Sandwich Recipe
Step 1
In a small bowl, combine the cream cheese, dill, lemon juice, salt and pepper. Mix well.
Place the bread on a flat surface. Divide the cream cheese mixture evenly between them, spreading evenly. Divide cucumbers between two slices and sprinkle seasoning salt over the tops.
Step 2
Top with the remaining bread slices, cream cheese face down. Cut sandwiches in half and serve!

- There are a few different ways these sandwiches can be served. Serve as a regular sandwich (with or without crusts), an open-faced sandwich or cut into quarters and served as a finger food.
- In addition to the dill, add other fresh herbs of your liking to make the spread even more flavorful.

Oh my gosh…can’t wait to try this. I love, love, love dill (and cream cheese, of course)! Cucumbers and onion is an easy and favorite summer salad here in Central PA, but I would have never thought of making it into a sandwich!
