    Why This Recipe Works

    I was gazing into our pantry to find a snack and saw a bag of rice cakes that was looking sad and lonely. I didn’t want to have to throw it away so I began to get creative ideas about how to present these snacks that my boys might label as “boring” into something colorful, exciting and delicious to enjoy together.

    Rice cakes don’t have to be dull! Load them up with toppings to turn them into flavorful and delicious snacks!

    Cucumber Cream Cheese Rice Cake

    This version of a rice cake is sweet and savory. My mom made it for me growing up: Cucumber Cream Cheese Sandwiches. If you’ve never tried this irresistible combination of ingredients, you must! It’s the best! And the seasoned salt adds an extra touch of delish.

    Turkey Sandwich Rice Cake

    Who doesn’t like a delicious, loaded turkey sandwich? Topping a rice cake with all of those same ingredients (minus the bread) allows you to enjoy the favorite sandwich minus wheat and tons of carbs.

    Honey Pear Rice Cake

    I do love savory and salty foods. I do love a fresh pear and a little sweetness too! A simple way to put this together is to slice up a pear, drizzle some honey and sprinle cinnamon over it to make the perfect combination sitting on top of a crunchy rice cake!

    Fried Egg Avocado Rice Cake

    This is probably my favorite rice cake creation of the bunch. Runny egg yolks, sriracha and avocados are three of my favorite things. Perfection!

    Cucumber Cream Cheese Rice Cakes

    • 2 tbsp cream cheese softened
    • 4 slices cucumber
    • seasoned salt sprinkling

    Turkey Sandwich Rice Cakes

    • 1 iceberg lettuce leaf
    • 2 slices deli turkey
    • seasoned salt sprinkling
    • 1 slice tomato
    • 1 pickle stacker

    Honey Pear Rice Cakes

    • 1/2 pear cut into thin slices
    • 2 tbsp honey
    • cinnamon sprinkling

    Fried Egg Avocado Rice Cakes

    • 1/2 avocado thinly sliced
    • 1 egg fried
    • 1 tbsp sriracha sauce

    Instructions

    Cucumber Cream Cheese Rice Cakes

    • Top 1 rice cake with an even layer of cream cheese, followed by cucumber slices and seasoned salt.

    Turkey Sandwich Rice Cakes

    • Top 1 rice cake with lettuce leaf, turkey, mustard, tomato slice, pickle and seasoned salt.

    Honey Pear Rice Cakes

    • Top 1 rice cake with pear slices, honey and cinnamon.

    Fried Egg Avocado Rice Cakes

    • Top 1 rice cake with avocado slices, the fried egg and sriracha sauce.
