The marriage of mint and chocolate nearly rivals that of peanut butter and chocolate, and with St. Patrick’s Day approaching, I wanted to bring these two delicious flavors into an irresistible brownie. But don’t limit making these on the holiday, these are great any time of year.
These Mint Chocolate Brownies are sheer perfection! The brownie base is so perfect and fudgy, topped a minty green frosting and then a final top layer of creamy dreamy chocolate.
In my opinion. These rank right up there with Peppermint patties, Junior Mints and Thin Mint Girl Scout cookies as some of the best dang little dessert treats on the planet. Once I start eating any one of the above I lose all self-control.
Mint-Frosted Brownies Ingredients
This recipe calls for ingredients every beginner baker should have in their kitchen. Use fresh, quality ingredients for best results.
Salted butter – Room temperature. Unsalted butter will also work.
Granulated sugar
Eggs – Room temperature.
Vanilla extract – Use a quality flavor extract for the best tasting results.
Semi-sweet chocolate chips
All-purpose flour – Use your favorite gluten free all-purpose baking flour for a GF option
Cocoa powder – Make sure it’s fresh and in-date to get the best flavor
Baking soda – Always use fresh leavening agents that are within expiration dates.
Salt – To balance out the flavors.
Powdered sugar – Also known as confectioners’ sugar.
Milk – I like to use whole milk for the frosting recipe.
Peppermint extract
Green food coloring – Optional ingredient.
How to Make Brownies with Mint Frosting
Follow these step by step directions to get the best results with your mint brownies.
Make The Brownies
Preheat the oven to 350 degrees F and coat a 9×13 baking dish with cooking spray.
Using a stand mixer fitted with the paddle attachment (or a large mixing bowl with a hand mixer), combine the butter, sugar, eggs and vanilla extract and beat on medium speed until creamy and free of lumps. Add the melted chocolate and mix until just combined.
In a separate bowl, combine the flour, cocoa powder, baking soda and salt. Mix these dry ingredients well. Gradually add to the butter-sugar mixture and beat on medium speed until just combined.
Pour batter into the prepared baking pan and spread the brownie mix evenly.
Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let cool.
Make The Mint Layer Frosting
Using the whisk attachment of a handheld mixer or stand mixer, mix the butter on medium speed until fluffy.
Add the powdered sugar until just combined. Add the milk, peppermint extract and food coloring (if using) and mix on medium speed for 2 minutes.
Spread in an even layer over the cooled brownies.
Make The Chocolate Topping
Combine the butter and chocolate in a microwave-safe bowl and heat in 30-second increments in the microwave (stirring after each) until creamy and free of lumps.
Pour the chocolate ganache over the top of the mint frosting layer and spread to even it out.
Refrigerate for a minimum of 1 hour for the chocolate frosting to set, cut into squares and serve!
Recipe Notes & Tips
- If you don’t have powdered sugar on hand, you can blast granulated sugar in your food processor or blender until you reach the proper consistency.
- Use GF flour for a gluten free version.
- Use plant based dairy products for a DF version.
- Peppermint extract can be found in the spice section or the baking aisle or your local supermarket.
- Make sure the brownies are refrigerated long enough for the chocolate glaze to set.
- Use a sharp knife to slice your brownies, and wipe the blade with a damp cloth between slices for the cleanest cuts.
- Place Andes mints on top of the brownies after slicing.
How To Achieve Mint Green in Frosting
If you are hoping to get that nice mint green color to match your creamy mint frosting, it is super easy to accomplish. If using liquid food coloring, play around with yellow and blue until you’ve reached the desired color.
The best and easiest way I’ve found to find that perfect minty hue is by using a combination of green and neon green gel coloring. I used approximately 1/2 teaspoon of each for the recipe shown in the photos
Peppermint Extract Substitutes
If you don’t have peppermint extract or can’t find any, you can use a few different substitutes to achieve a similar mint flavor.
- Peppermint oil – make sure it’s food grade/edible. 1/4 teaspoon of the oil = 1 teaspoon mint extract
- Spearmint Extract
- Mint extract – a blend of peppermint and spearmint flavors
- Peppermint schnapps or Creme de Menthe – about 1 tablespoon should do the trick
How to Serve Chocolate Peppermint Brownies
Serve this as part of a grand St. Patrick’s Day celebration or just for a cozy Sunday on the couch.
They’re also perfect for potluck parties and game day gatherings. Especially if your favorite team wears green!
How Long Do Brownies Last in the Fridge
Cover leftover brownies tightly with plastic wrap and store at room temperature for up to 4 days, or refrigerated for up to 7 days.
How To Freeze Brownies
If you want to freeze the brownies, place chilled brownies in a freezer safe, sealed airtight container and freeze for up to 6 months. I actually like to freeze the slices on a cookie sheet before transferring them to a storage bag.

Ingredients
BROWNIES
- 1 cup salted butter softened
- 1 1/2 cups granulated sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 cup semi-sweet chocolate chips melted
- 1 1/2 cups all-purpose flour
- 1/4 cup cocoa powder
- 1 tsp baking soda
- 1 tsp salt
MINT FROSTING
- 3/4 cup salted butter softened
- 3 1/2 cups powdered sugar
- 2 tbsp milk
- 1 1/2 tsp peppermint extract
- Green food coloring as needed, if desired
CHOCOLATE TOPPING
- 1/2 cup salted butter
- 2 cups semi-sweet chocolate chips
