Replace rice with this veggie-packed Whole30 cauliflower rice. It’s easy and prepared in 15 minutes. Flavor and texture from mushrooms and herbs, you can enjoy dinner!
INGREDIENTS
3 c Cauliflower
3 c Mushrooms
1/4 c Cilantro
1 Lime
1/2 tsp Salt and pepper
STEP 1
Heat olive oil in a skillet, then add cauliflower, mushrooms, cilantro, lime juice, salt and pepper. Cook for 10 minutes until veggies have softened.
STEP 2
Remove from the heat, top with extra lime juice and serve immediately!
Purchase a head of cauliflower and use a food processor to rice or the refrigerated section at the local grocer sells rice cauliflower in pre-packaged bags.
