Red potatoes are soft, buttery and flavorful. They are easy to cook (impossible to mess up!), especially when an Instant Pot is involved.

– Red potatoes – Butter – Garlic – Sea salt – Lemon – Flat-leaf parsley

Cook the potatoes in the instant pot for just 10 minutes (+ time to build pressure).

Drain the potatoes and water from the instant pot. Then turn the IP to saute function, add in the garlic, butter and lemon juice, plus parsley, salt and pepper.

Toss the cooked potatoes into the garlic mixture and let it coat them completely before serving.
