Mango Jalapeno Salsa Recipe

Ingredients

  • 2 mangoes ripe, chopped
  • 1 tomato chopped
  • 1 cucumber chopped
  • 1/2 red onion chopped
  • 1/4 cup fresh cilantro finely chopped
  • 1 jalapeno finely chopped
  • 2 tbsp olive oil
  • 1 lime juiced
  • 1 tbsp red wine vinegar
  • 1/2 tsp sea salt

Instructions

  • Combine all ingredients in a large bowl and mix well. Cover and refrigerate until ready to serve!

Notes

  • If mangoes are not in season and you still want to make this tasty salsa, replace fresh with frozen or substitute with another sweet fruit such as pineapple, grapes or mandarin oranges.
  • Squirt extra lime juice and sprinkle salt and pepper over the top just before serving!
  • It tastes amazing when thrown over grilled chicken, grilled salmon or a leafy salad. It also tastes delicious in a lunch wrap, fish tacos or even eaten as a solo salad. My favorite way to enjoy it is to scoop it up with salty tortilla chips!
  • This mango salsa recipe is 100% gluten free!
  • For an added touch of YUM, add diced avocado or black beans to the mix!
  • Spice it up! Add an extra jalapeño if you're feeling saucy!
  • Replace the cucumber with extra onion and cilantro for a less crunch salsa.
  • Be sure to chop everything up as small as possible if you are enjoying this as a dipping salsa.
