Making vegetables in the crock pot is a great way to use up extra veggies! Enjoy them now or freeze for another time. Feel free to swap out veggies from the recipe with whatever you have on hand.
INGREDIENTS
3 c baby red potatoes3 c carrots2 c celery3 c mushrooms5 cloves garlicjalapenos1 tbsp seasoned salt1 tbsp oregano1/2 tsp cayenne pepper1/4 c olive oil2 c water
STEP 1
Assemble and wash all the vegetables. Chop your vegetables to the desired thickness.
STEP 2
Place all ingredients in a large slow cooker. Mix well, cover and cook on High heat for 4 hours, stirring occasionally.
Serve as a side dish or freeze for later!

Zucchini, squash, bell peppers, beets, corn, peas, beans, Brussels sprouts and sweet potatoes are all great options, as well.
