Ingredients

  • 30 oz hash browns frozen, any variety
  • 1/2 cup butter (1 stick) cut into pats
  • 8 oz heavy whipping cream
  • 1 tbsp Seasoning Salt such as Lawry's

Instructions

  • Preheat oven to 350 degrees F. Coat a 9x13 baking dish with cooking spray. Distribute frozen hash browns evenly in prepared baking dish.
  • Spread out the pats of butter evenly over top of the hash browns, and pour whipping cream evenly over the top.
  • Sprinkle evenly with seasoning salt. Cover pan with aluminum foil and bake in preheated oven for 1 hour.

Notes

  • This 4 ingredient hash brown casserole (aka "funeral potatoes") can easily become a complete meal by adding diced ham, ground turkey or sliced breakfast sausage.
  • This recipe would be delicious with a can of diced green chilies thrown in for added spice.
  • Adding a thin layer of shredded cheddar cheese 15 minutes before cook time is up is an absolutely delicious way to create an easy batch of cheesy hash brown potatoes.
  • To achieve that golden brown crispy perfection, remove the foil around the 45-minute mark.
  • Store leftovers in an airtight container in the fridge for up to 5 days.
