Ingredients

  • 12 oz egg noodles
  • 8 oz sour cream
  • 3 oz cream cheese softened
  • 4 oz diced green chilies
  • 1 lb ground beef
  • 20 oz rotel tomatoes
  • 6 oz tomato paste
  • 1 tsp Italian seasoning
  • 1 tsp seasoned salt
  • 1 cup cheddar cheese shredded
  • 1/2 cup parmesan cheese grated
  • 1 cup mozzarella cheese shredded

Instructions

  • Coat a 9×13 baking dish with cooking spray and set aside. Cook egg noodles in boiling water 2 minutes shy of being al dente.
  • Drain and add sour cream, cream cheese and chiles (if using) to the noodles. Stir gently until combined. spread evenly onto the bottom of the prepared baking dish.
  • Preheat oven to 350 degrees F. Cook ground beef in a skillet over medium heat until no longer pink; drain. Add canned tomatoes, tomato paste, Italian seasoning and seasoned salt. Cook for 3 minutes, stirring. Pour mixture evenly over noodles in baking dish.
  • Top with an even layer of cheddar, Parmesan and Mozzarella, in that order. Cover tightly with foil and bake in the preheated oven for 30 minutes. Remove foil and bake for an additional 10 minutes.

Notes

  • 15 minutes before serving, whip up a batch of garlic bread or cheese bread to serve alongside the dish.
  • Use diced tomatoes instead of Rotel and omit the green chiles if you don’t want the spice.
  • You can add some diced onions when you cook the meat if your picky eaters allow.
  • Use appropriately sized pasta or macaroni noodles in lieu of egg noodles.
  • You can use ground turkey or chicken as a sub for the ground beef.
  • Top with chopped chives or green onions as garnish.
