Ingredients

  • 3 tbsp olive oil
  • 3 cloves garlic minced
  • 1 yellow onion chopped
  • 8 oz baby carrots sliced (~2 cups)
  • 1/4 cup Italian parsley finely chopped
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1 tsp pepper
  • 64 oz chicken stock or broth
  • 8 oz egg noodles
  • 2 cups chicken cooked and shredded (pull from a Rotisserie chicken)
  • 1/4 cup parsley chopped, for topping

Instructions

  • Set Instant Pot to saute. Add the olive oil and heat for 2 minutes. Add garlic, onion and carrots and saute for 3-5 minutes, or until soft and fragrant.
  • Add parsley, thyme, salt and pepper to the pot and stir. Press Cancel to stop sauteeing.
  • Add the chicken stock/broth and egg noodles to the pot. Place the cover on the pot and set timer to 4 minutes on high pressure (pressure cook setting). It will take the IP around 17 minutes to build up pressure before it begins cooking.
  • When cooking is done, do an immediate quick release and wait for the float valve to drop. Remove cover and turn off Instant Pot. Add the shredded chicken to the pot.
  • Let sit for 2 minutes in the pot and serve with fresh parsley.

  • Sliced celery is also a great addition to this soup!
  • Chop your veggies to bite-sized pieces.
  • Use shredded chicken breast meat instead of store-bought rotisserie chicken.
  • Use white and dark meat for this easy recipe.
  • When you pressure cook the chicken along with the soup, such delicious flavor is added. If you’d prefer to add pre-cooked, pre-shredded chicken (maybe from a Rotisserie chicken) simply add it to the pot at the end of the recipe, as stated.
  • Replace egg noodles with another type of similarly-shaped or short form pasta like bowtie or fusilli, if desired.
  • Add a bay leaf or three some Italian seasoning, or other dried or fresh herbs.
