Ingredients

  • 16 oz zesty Italian salad dressing
  • 1 lb rotelle or rotini pasta cooked and drained/rinsed
  • 1 yellow onion chopped
  • 8 celery stalks thinly sliced
  • 16 oz cojack cheese cubed
  • 16 oz summer sausage cubed
  • 42 oz artichoke hearts quartered, drained
  • 13 oz pitted black olives drained
  • 16 oz julienned sun-dried tomatoes drained and chopped
  • 1/2 tsp sea salt
  • 1/2 tsp ground pepper
  • 2 tsp red pepper flakes
  • 1/4 cup Parmesan cheese grated

Instructions

  • Combine all ingredients in a large bowl, cover and let sit overnight. Serve chilled.

Notes

  • After cooking, make sure to run the hot pasta under cold water and drain it really well.
  • Allowing the ingredients to marinate in the fridge overnight is ideal. When you pull the cold pasta salad out of the fridge the next day, the flavors will be perfect. Drizzle olive oil over the top and sprinkle with salt and pepper just before serving.
  • If you are feeling adventurous and would like to branch out from this recipe, consider adding other veggies. Great options include fresh tomatoes (fresh cherry tomatoes or grape tomatoes both work wonderfully), fresh broccoli florets, baby spinach, cucumbers, carrots, green beans or bell peppers.
  • Make sure you get pitted olives!
  • You can skip the dressing and add the oil from the jar of sun-dried tomatoes instead, maybe with a little red wine vinegar.
  • Consider adding fresh herbs to the mix! Fresh basil, chives or parsley all taste great.
